These Keto egg muffins with cream cheese are perfect for breakfast or an afternoon snack. They are effortless to prepare and require just a couple of simple ingredients you likely have on hand. We have decided to add some dried herbs to the recipe, but that's completely optional. Feel free to experiment with your favorite herbs or spices (we recommend a pinch of cayenne or a few drops of your favorite hot sauce). You can also add a tablespoon of goat cheese for some extra flavor. These Keto egg muffins are best when served warm, but you can store them in the fridge for several days.

  • Step 1

    Finely chop the parsley. Crack the eggs into a bowl and add the cream cheese, parsley, garlic powder, chives, thyme, and salt. Whisk well to combine.

    Preheat the oven to 160°C (320° F). Melt the butter in a microwave. Grease a 6-cup muffin tin with butter. Shred the cheddar and mozzarella. Divide the cheddar equally between the prepared muffin cups.

    Pour in the egg mixture until 3/4 full. Top with the mozzarella. Bake for 20 minutes.

    When done, remove from the oven and cool for 15 minutes. Serve the muffins immediately or store them for later. They pair perfectly with sour cream.

    I doubled the recipe because my muffin tin had 12 spaces, and I am glad I did.. These have great flavor.. Easy to throw together... and great for meal prep! Will definitely make again!

          I made flatbread in oven just using 200g cottage cheese blended with 2 eggs, put on greaseproof paper/tray in oven 20mins on 180 degrees (or longer depending on oven). Was great/carnivore treat.

        This was really good. However, I cooked it differently- by using my instant pot (and some handy dandy egg bite molds). Put 1 cup cold water in bottom of IP, fill the egg molds, cover with tin foil, and set mold on top of trivet (that came with IP). Cook on manual or pressure cook doe 10 min and let steam release naturally for 10 min. They were fantastic. And easy to hold vs just an omelet.

            It mist definitely taste good. But it is no more than cheese omelette. It is cheaper to cook on top of the oven. You can just use deviders or metal cooking shaped

                    Very Tasty! I softened the cream cheese 10 seconds in the microwave and mixed it smooth before adding to the egg mixture. I also used onion powder in place of thyme. I tried the sour cream suggestion to dip into-(very tasty!) Next time I will add chopped spinach and ham or bacon. Definitely a save!!!

                      Did not use cream cheese, but wow will be making these again. Is there a way I can exit out a ingredient from the nutrition list or do I have to scan everything individually?

                        These were amazing! I used electric beater on the eggs, added some leftover ground taco meat, added taco seasoning, hot sauce and then put in Air Fryer- followed the rule- lower bake temp by 25 degrees and lower bake time 20%. Came out creamy and perfect. And this is the best version I’ve made yet. I batch these every week and have made dozens of different versions. Thank you! Will be making these every week now.
