  • Step 1

    Preheat an oven to 375 degrees. Chop up THAWED broccoli and HALF of the pepperjack cheese into small pieces. Stir these ingredients together in a mixing bowl with the first amounts of olive oil, salt, and pepper; and stir in the garlic.

    Prepare 2 large chicken breasts by butterflying them nearly all the way through to create 2 deep pockets. Stuff half your broccoli mixture into both chicken breasts and secure them shut with toothpicks.

    Line a sheet tray with aluminum foil or parchment paper. Arrange the remaining broccoli filling into 2 portions on the sheet tray. Place a stuffed chicken breast on top of each broccoli portion. Sprinkle the remaining seasonings and olive oil over the top of the chicken breasts.

    Bake the chicken for 25 minutes. Then, lay the last slices of pepperjack cheese over the top of the chicken breasts and bake for an additional 7 minutes.
