Low Carb Tuscan Style Sausage Skillet

118 ratings

To evoke a Tuscan summer in your kitchen, spicy Italian sausage flavored with peppers and fresh basil makes for a wonderful lunch or dinner. If you’re not into spicy, you can always choose mild sausage and omit the flaked red pepper seasoning. A creamy, cheesy sauce brings all the flavors together and makes it all the more appetizing. Enjoy with one of your favorite Keto sides for a full meal!

Recipe Steps

  • Step 1

Heat a large pan on medium-high heat. Slice the sausage links into ½-inch thick slices, and place them in the pan. Cook the sausage on both sides for a few minutes (with lid on) until the sausage is well browned and cooked through. Use a slotted spoon to set the sausage aside for later, leaving the juices in the pan.
    Step 1
  • Step 2

Slice the red onion and bell peppers, and toss them in the pan. Cover with the lid, and cook on medium heat, stirring occasionally, until the vegetables are soft - about 5 min. Set these aside with the sausage with a slotted spoon.
    Step 2
  • Step 3

Return the pan to the heat once again. Turn the heat to medium-low, and melt the butter in the pan. Mince and toss in the garlic.
    Step 3
  • Step 4

Stir in the heavy cream, and heat the liquids through until the fats are combined. Then, slowly stir in the chicken broth. Stir in the salt, pepper, red pepper, and basil.
    Step 4
  • Step 5

Return the sausage and vegetables to the pan. Let the stew simmer for another 5 minutes. Sprinkle some parmesan cheese on top, and serve!
    Step 5

Tasty but extremely calorie dense. One regular size bowl of it is like 1600 calories… that’s a lot even for a rich keto meal. I want to eat more than a tiny amount of food per day.

Only my 2nd keto day—my husband not a fan of peppers so I substituted frozen cauliflower. I also had no heavy cream so I used the almond/coconut coffee creamer I just got. It was delicious!

I’ve used this recipe before, aren’t you supposed to put the Parmesan in before the sausage and veggies?

Having read all of the concerns in the reviews, I made some adjustments to reduce carbs and calories and it turned out absolutely delicious. There were several complaints that the sauce was too thin so I reduced the heavy cream to half a cup which took out carbs and calories and I also reduced the cheese to 3/4 cup. There was still plenty of sauce and it was pleasantly thick in no time. Finally, instead of bell peppers I used mushrooms. I will definitely make this again. My adjustments brought the carbs down to 6 grams per serving and the calories to just over 800 which is still a lot of calories but I ate it on a day where I burned so many on an extra long hike that it didn't matter.

Both the heavy cream and the Parmesan I use are zero carb (still not zero cal though of course). I like the sub of mushrooms — I don’t always care for bell pepper. The canned mushrooms I use are also zero carb. Thanks for the share.

I want to make this because it looks delicious, but is one serving really over a thousand calories? Doesn't seem worth it.

Hi fat, too. You would definitely need to plan your day around this meal.

And 9.7 net carbs. Sounds great, but those numbers don't fit in any of my weight loss plans — maybe for those doing One Meal A Day?!

When I looked at this recipe it said that I would be over in calories and fat? I only had 2 eggs boiled today? Is this for after you've lost weight?

Great flavors and will make again. Only question, how thick should the sauce get? Mine was very runny even after letting it simmer for about 10 minutes. I even added more parmesan.

I made this on sauté in my instant pot for 9 servings! I also steamed broccoli and served on top of it. It was fantastic!! I have big family and not a frying pan that could handle the volume. I also bought sweet sausage and really loved it! Thank you

Delicious! I substituted Vegetarian sausage and it was delicious carbs/protein/fat are the same with the new Beyond Meat brands. Everyone loved it!! Added Rice and an extra side of veggies for the rest of the family. The only thing was I had a hard time figuring out what 1 serving is exactly so I left one star out because I’m not sure about the serving portions.

Super delicious. I did double the veggies. Will throw off carb ratio. However it was worth it. I think next time I will add a little spinach. I did not have fresh basil. Added teaspoon of dried. Would absolutely make this again.

Nice little spice - used hot italian and mild italian mixed. Great flavors. Folding in the parmesan cheese takes some practice to keep it from clumping. Great meal!
