Keto Spicy Chicken and Sausage Stew
This hot and spicy stew is rich in aromatic herbs and spices, tender chicken and juicy pork sausages. If you would prefer the stew less/more spicy you can adjust the seasonings to taste.
This stew is great served with a slice of low carb bread.

Ingredients
Chicken Thighs Skinless Boneless by Sanderson Farms
4 thigh
Sausage, Pork, Fresh
4 medium link - breakfast size
Olive Oil
2 tablespoon
Celery Stalks
1 medium - stalk - 7 1/2" to 8" long
Red Onion
1 tablespoon, chopped
Red Bell Peppers, Raw
1 medium - 2 1/2" diameter x 2 3/4"
Hot Chili Peppers, Red, Raw
½ each - approx 4" - 6" long
Garlic Powder
0.5 teaspoon
Oregano, Dried
1 teaspoon
Thyme, Dried
1 teaspoon
Gourmet Collection Smoked Paprika by Mccormick
1 tsp
Chicken Broth, Bouillon Or Consomme, Homemade
4 cup
Cilantro
2 tablespoon, chopped
Tomato, Canned
½ cup
Heavy Cream
⅓ cup
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon
Recipe Steps

Step 1
Heat a tablespoon of olive oil over a medium/high heat. Add the chicken thighs and cook until browned all over. Set aside.Step 2
Slice the sausages in half, add to the pan and cook until browned all over. Remove and set aside with the chicken.Step 3
Heat the remaining olive oil in the pan. Thinly slice the bell pepper, onion and chili and finely dice the celery. Add to the pan and fry gently until softened.Step 4
Add the chopped tomatoes, garlic powder, oregano, thyme, paprika, salt and pepper to the pan. Stir well to combine.Step 5
Add the stock to the pan and stir well. Return the sausages and chicken to the pan and simmer for 20 minutes.Step 6
Stir the cream into the pan and simmer for a further 10 minutes.Step 7
Scatter with fresh cilantro to serve.

Absolutely delicious! Traded the peppers for a can of Rotel chili and the sausage for a smoked turkey sausage. Husband and daughter raved about it! Will definitely make this a regular meal!!

Absolutely delicious! I left out the onion entirely and used one Fresno chili pepper. The only think I would do differently is empty and scramble the sausage. I think it would make for better consistency. Thanks for sharing!
