Keto Cheesy Spinach Bake
This rich spinach bake is combined with oozy mozzarella, tangy cheddar, heavy cream, salty Parmesan and baked until bubbling and golden.
This makes a great side to roasted meats, perfect to accompany Sunday lunch.

Ingredients
Baby Spinach
8 cup
Parmesan Cheese
2 tablespoon, grated
Unsalted Butter
1 tablespoon
Salt, Sea Salt
1 teaspoon
Heavy Cream
1 cup
Cheddar Cheese
½ cup, grated
Mozzarella Cheese
½ cup, grated
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
Set the spinach in a colander and pour over boiling water to just wilt the spinach. Drain and set aside. Once cool enough to handle squeeze out any excess liquid.Step 3
Melt the butter in a saucepan and add the cream, mozzarella, cheddar, salt and pepper. Gently heat through, stirring to melt the cheeses until you have a thick sauce. Remove from the heat.Step 4
Add the spinach to the pan and stir well to combine.Step 5
Spoon the creamy spinach mixture into a small oven dish in an even layer. Sprinkle over the grated parmesan.Step 6
Transfer to the oven to bake for 18-20 minutes or until golden and bubbling. Serve hot.

I doubled everything except salt, halfed that, added mushrooms, bell peppers, onion, garlic and sausage, turned out pretty good, I've found most of these recipes you have to adjust the ingredients to your taste buds.

Sadly I didn't like this runny salty spinach soup. After reading comments, I used half the cream, more than 9 c of spinach, less than half the salt. I don't know the solution, but won't try again.

Reading the comments I added ground sausage and onion but I put a level tsp of xanthum gum in the cheese sauce to thicken it and I used half a tsp of seasoned salt. It was very good

Definitely going to make this again and add some chicken breast and more spinach! Very good!!! I added some crumbled bacon to mine!

I have one for you fry bacon when done take it out, and in grease scramble 5 eggs, when that is done put in your spinach cook down add the bacon back in . In a small cup half a cup of milk add just 1 tsp of vinegar mix ,and add slowly to the pan tastes as you go . Hope you like it.

WAY too salty and runny! I cut the salt way back on my second run and added a beaten egg to the sauce mixture as it cooled. MUCH tastier and the egg thickened it up! Two eggs might even be better.

I am new to this forum, but I agree with a previous comment- too soupy and far too salty! It has potential,,, I’m thinking either add an egg for body or add more spinach. One could consider some other vegetables that this mixture ( without the salt) could be used as a sauce… I might also add garlic and scallion- or maybe some onion powder?

I loved it I made only of the recipe and cooked it in my air fryer for 11 minutes on 400* it was wonderful. I used the Salad spinner to get the water out of the spinach. ♥️

Very soupy - need to add more spinach. I will definitely try this again - but I will not add any salt to the mixture. It was really salty for my taste.

Spinach is why it was soupy. It has a high amount of water. Make sure to squeeze as much of the water out of it by hand after you drain it.

Tasty but a bit soupy. Next time I might wilt the fresh spinach in the cheese sauce or add more spinach.

I used frozen spinach! It was real soupy. I have to use double the amount. Very good! Yummy!
