  • Step 1

    To prepare the pork chops, lay them out flat on a clean surface. On the exposed side of each, drizzle a ½ tsp of olive oil and a pinch of salt and pepper. Gently massage these ingredients into the pork chops.

    If you own a well seasoned iron skillet, use this to sear the chops on high heat. Otherwise, use a small skillet that has been sprayed with pan spray. Lay each pork chop, seasoned side down, in your skillet and drizzle an additional ½ tsp of olive oil and pinch of salt and pepper on the raw side. Sear both sides of the pork chops for 1-2 minutes per side.

    Preheat an oven to 375 degrees. Prepare a sheet tray by spraying it with pan spray and drizzling the second amount of olive oil. Place the seared pork chops evenly spaced on the tray. Crush the garlic cloves and arrange them with the thyme (about 8 sprigs) on the tray.

    Slice the lemon into 4 slices and place one on top of each pork chop. You can arrange the ends of the lemon on the tray as well. Finally, dice the butter into tiny cubes, and arrange these across the pork chops and thyme sprigs.

    Bake the chops for about 25 minutes, or until they reach 145 degrees internally. Serve hot with the roasted lemon slices and garlic cloves!

    Received actual applause for this dish! Delish when made with pork tenderloin- seared and roasted in a heavy calohalon then allowed the tenderloin to rest while I deglazed the pan with a little water for a pan sauce. 12 out of 10!

      I don’t have pork chops, but I have country pork ribs which I’m going to use since they are boneless pork is pork

        Very good! But if your pork chops are less than an inch thick I’d cut back the oven time 5 minutes. I cooked the asparagus on the same sheet pan with the pork chops and put lemon on them as well. Since the temp is 375 the asparagus cook perfectly in 20-25 minutes.

                  Came out good! I put poultry herbs seaso ing on before I sauted and used a thermometer to make sure it didn't over cook.

                    I made this according to directions. Only thing I did different was to keep checking to make sure I didn’t over cook the pork chops. They stayed juicy.

                      You have put 50mins as cooking time, but then 25mins in the steps. I would imagine it would be 25 + the 2mins each side in the pan. Can you please correct the times? Thanks

                        The 50 minutes is the total time - both prep and cooking. If your personal cooking time is shortened, then that's a bonus for you!

                      I found this to be quite dry and flavourless despite all the great ingredients. Perhaps basting the juices over the meat several times during the baking process would add flavour and moistness.

                              I altered this and added lemon pepper seasoning because I felt the taste fell flat. Otherwise, cooked as instructed. Was good.
