Keto Lemon And Dill Breaded Cod
These crispy cod fillets are lightly coated in a lemon and dill mayonnaise and dusted in a seasoned crumb of ground almonds. The fish is perfect served with an extra helping of mayonnaise and a portion of steamed broccoli or green beans.

Ingredients
Cod, Cooked From Fresh
2 fillet - each 4 ounce raw
Lemon Peel
2 teaspoon
Mayonnaise
1-½ tablespoon
Dill Weed, Fresh
1 tablespoon
Food Cupboard Home Baking Almonds Ground by Sainsbury's
3 ounce
Garlic Powder
0.5 teaspoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray.Step 2
Add the ground almonds to a mixing bowl along with the salt and pepper and stir well to combine.Step 3
In another bowl, add the mayonnaise, lemon zest, garlic powder and dill. Stir well to combine.Step 4
Coat each cod fillet on both sides in the flavored mayonnaise.Step 5
Tip the ground almonds out onto a clean work surface and dust each of the fillets in the breading so that they are completely coated.Step 6
Arrange the breaded fish on the oven tray and bake for 15 - 18 minutes until crisp and golden on the outside and the fish is cooked through.

Very nice breadcrumb dressing. Slightly dry but no problem as I made a sourcream and lemon sauce to have with it. Using different herbs i will try it with chicken. Loved the lemon taste through it!

Very quick to put together & very tasty. The mayo keeps the fish really moist & I loved the flavour of lemon & dill cutting through the fish. Will definitely cook again. Served it with green beans & kale cooked in a cream sauce.
