Keto Cauliflower Skewers With Bacon
These cauliflower skewers are tossed in Parmesan cheese and aromatic chives then wrapped in bacon and baked until crisp and caramelized.

Ingredients
Bacon
12 slice - 6" long
Parmesan Cheese
2 tablespoon, grated
Cauliflower
1 small - head - 4" diameter
Chives, Dried Or Dehydrated
1 teaspoon
Olive Oil
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Cover 4 wooden skewers in water to soak.Step 2
Dice the cauliflower into 12 even sized florets. Add to a pan of boiling water and boil for 3 minutes. Drain and immediately submerge in ice cold water to stop the cooking process. Drain and pat dry.Step 3
Preheat the oven to 400 degrees Fahrenheit.Step 4
Add the cauliflower florets to a mixing bowl and sprinkle over the Parmesan, chives, salt and pepper. Drizzle with the olive oil and use your hands to rub the seasonings into the cauliflower.Step 5
Wrap each individual floret in a slice of bacon then add three bacon wrapped florets to each skewer.Step 6
Arrange the skewers across a shallow oven tray and bake for 20-25 minutes until the cauliflower is tender and the bacon is crisp, turning halfway through.
