What is a silicone mat?
A silicone mat is a non-stick cooking mat that lines a rimmed baking sheet. It is excellent for items like this that tend to be sticky because it allows for food to release very easily from the pan.
Can I use other low carb fruits?
Yes, feel free to use other low carb fruits. Just be sure to calculate the macros separately, as the net carbs will change.
How do I store finished fruit leathers?
Place finished fruit leathers on parchment paper, roll it up and then wrap it tightly and plastic wrap. To make individual portions, cut the rolled-up fruit leathers into 2-inch sections and wrap each individual and plastic wrap.
Can I use a dehydrator?
Yes, if you have a dehydrator, the process will be a lot easier and straightforward. However, this recipe was written for people that do not have that piece of equipment.

Preheat an oven to 150 F. Prepare rimmed baking sheets with two silicone mats. Place the frozen mixed berries in a large microwave-safe bowl. Microwave the bowl for one minute or until berries are slightly thawed.Step 2
Place berries and collagen in a blender. Blend until very smooth.Step 3
Divide the berry mixture between the two silicone mat-lined baking sheets. Place in the preheated oven and bake for at least three and a half hours. You may need to rotate the pan between the racks halfway through the bake time. You will know when your fruit leathers are ready when they are not liquid or stick to your fingers when you touch them. Turn off the oven and allow them to sit overnight.Step 4
The next day, move the fruit leathers from the silicone mats and place them on a piece of parchment paper. Roll up the parchment paper in a bit of plastic wrap and cut them into four pieces each. Wrap each one individually in plastic wrap.
