  • Step 1

    Preheat an oven to 400 F (200 C). Meanwhile, you can prepare the dough. Add the almond flour, salt, xanthan gum, and eggs to the bowl of a stand mixer with a paddle attachment, and leave this aside.

    In a small pot, combine the cream cheese and shredded mozzarella. Place the pot over a low heat on the stove. Stir continually until both cheeses have melted together and are well combined. This can take up to 5 minutes, as the stirring gets a little tough.

    Once the cheeses are smooth and well combined, transfer to the stand mixer bowl with the other ingredients. Mix on a medium-low speed until you get a paste-like dough. The mixture will be a little stiff.

    Let the dough rest momentarily. While the dough rests, line a large baking sheet with parchment paper. Divide the dough into six even-sized portions. Roll each portion of dough into a smooth ball.

    Use your thumb to poke a hole in the center of one of the dough balls. Place both thumbs in the hole and use your hands to gently stretch and pull the dough into a bagel shape. Don’t allow the hole to get too wide or the dough stretch too thin. Repeat this process for all six bagels.

    Arrange the bagels across your prepared baking sheet. Melt the butter in the microwave for about 20 seconds, then brush the butter over the top of each bagel. If you wish, this is the time to add any toppings to your bagels, such as an everything bagel mix, sesame seeds, poppy seeds, etc.

    Transfer the tray to the preheated oven. Bake the bagels for 18-20 minutes, rotating them halfway through to encourage even baking. The bagels should be cooked through and golden-brown all over.

    Allow the bagels to cool completely before slicing or eating them. You may even leave them overnight if desired. Serve the Keto bagels your favorite Keto fillings or spreads for breakfast or lunch.

    Seriously enjoyed these bagels❣️ Worth the effort. I used a variety of cheeses to make the 3 c. 1 cup of it being a sharp aged cheese which I feel gave it a slight sour dough flavour. Lovely bagels. Soft enough for a sandwich. Very satisfying texture.

          Made them this morning. I didn't have almond flour so I substituted with flaxseed and psyllium husks. I also added everything bagel seasoning. Not bad but fell apart while cutting and eating. Maybe it's the flax and psyllium? Not sure. But I'll try again with almond flour next time.

            Wanted to love them, but they are just ok. Heavy, dense texture and at 6 carbs and 464 cal. I’d rather eat something else instead.

              I make 12 and keep them in the fridge. I agree they are too much but they replace bread for me, I can have a sandwich, spread some pate etc

              I enjoyed these, but they are very heavy. I don't treat myself to "fake carbs" very often but these were a nice "real carb tasting" treat.

                I’ve made 12 smaller and they were a lot better. I agree with you, when I first made the recipe and made only 6 they felt very heavy. I love the recipe as well especially with some fried pancetta😊.

              As a bagel fiend, I wanted to love them. They taste fine and they’re probably the closest you can get to a real bagel on keto, but the texture doesn’t sit right with me. I’m autistic though so it might be a personal problem! 😅

              Can this be done with cottage cheese instead of cream cheese? I'm lactose intolerant and LF cream cheese is really hard to get in my area

                          Go by weight and the macros will be more predictable. Recipe says one serving is 2.7 oz or 76 grams.

                          For some reason it won’t let me explain. I made with mozzarella and mixture would not combine. I saw a post that said she used cheddar, so I tried that and they turned out perfect. So good topped with cream cheese and with cheddar flavor. Delicious!

                        Mine came out fine, but they taste very bland. No real flavor and it left a weird aftertaste. Did anyone else experience this? My daughter and co-worker also said they are lacking taste.
