What type of cheese to use?
A traditional recipe is made with Tome fraiche – a type of hard-pressed cheese based on cow's milk. However, Tome fraiche can be difficult to find outside France, so you can use other types of cheese, such as sharp cheddar, Swiss cheese, or Gruyere. You can also add a small amount of shredded mozzarella for fantastic results!

How to store Aligot?

Cauliflower
550 g
Butter
3 tbsp
Salt and Pepper, to taste

Sharp cheddar
1.5 cup, shredded
Garlic

Creme fraiche

Step 1
Cut the cauliflower into small florets. Bring a large pot of water to a boil and add the cauliflower. Cook until completely tender.Step 2
Remove the cauliflower from the heat and drain. Melt the butter in a microwave. Add the cauliflower and butter to a food processor.Step 3
Season with some salt and pepper to taste. Process until completely smooth. Remove the cauliflower from the food processor and set it aside.Step 4
Peel the garlic clove. Add the creme fraiche and garlic to a small saucepan and bring to just steaming. Make sure not to boil the creme fraiche. Stir constantly.Step 5
Remove and discard the garlic. Pour the hot creme fraiche into the mashed cauliflower. Mix well.Step 6
Transfer the cauliflower mixture to a large pan and place on the stovetop over low heat. Using a spatula or a wooden spoon, beat the mixture until it turns glossy. This will take about 2 minutes.Step 7
Shred the cheddar cheese. Raise the heat to medium and mix in the shredded cheddar, ½ cup at a time. Continue to mix until the cheese has completely melted and the aligot is entirely smooth.Step 8
Taste and add more salt or pepper if necessary. Optionally, garnish with some freshly chopped parsley before serving.

I live in a rural area and a regional chain carries it, as well as a food coop. If you are near stores like Whole Foods or Trader Joes, you could try those. Aldi may even have, depending. They have a pretty decent dairy selection in many stores. You can also make your own. It is cream & buttermilk, overnight. Look up how to, it's super easy. Good luck!

This was good! I had to sub mascarpone and cream for creme fraiche, because that's what I had on hand, but no other subs and it was a great change from roasted cauliflower. Went great with pork belly!
