  • Step 1

    Melt the butter in a large saucepan over a low/medium heat. Add the shallot and sweat for a minute to soften. Thinly slice the mushrooms, garlic and leek and add to the saucepan. Stir well to combine and cook for 3-4 minutes over a medium heat to soften and brown the mushrooms.

    Add the stock and bring to a gentle boil. Reduce to a simmer and cook for 7-8 minutes until the vegetables are soft and tender.

    Transfer to a blender or use a stick blender to process until smooth, season if required then stir in the heavy cream to serve.

    Made for supper. Added a few hot pepper flakes, 1/4 of sweet orange pepper that was hanging around in the fridge, and fresh rosemary. Did not blend. A WINNER!

        Just made it tonight, added spinach to make it more filling. I’m really into spices and used smoked salt and smoked black pepper along with a half teaspoon of red pepper flakes and finally a dash of nutmeg. Great and filling. Glad I have leftovers!!

          Delicious! I added fresh rosemary, black pepper, & a light sprinkle of red pepper flakes. I didn't puree the soup because I like it chunky. Very satisfying on this cold winter day 🍵

            This soup is amazing. It’s a regular staple in our home. I’m the only one on the diet because of my diabetes and high blood pressure but so far everyone is loving the meals I make. I get 90% of my recipes from Carb Manager. This diet has really helped with my numbers and bonus, weight too. I do add a 1/2 tsp of garlic salt extra and a 1/4 tsp black pepper but other than that, no changes at all! So quick, so easy, so delicious.

              This was an excellent basic recipe low-calorie and great for a snack. I wanted it to be more like a meal so I added salt pepper and red pepper flakes to bolster the flavor a bit. I added 2 tablespoons of cream cheese and one cup of cauliflower Rice for even more texture. I topped it with one slice of bacon crumbled per serving. It only added one carb, but more protein and fat for staying power. I had this after an 18 hour fast with bullet proof coffee was very satisfied in full. I’ve never used leaks before and will definitely be looking for other things to do with them. Thanks!
