Are Peanuts Keto?
Peanuts are not technically a member of the nut family but are instead classed as legumes. Although a very popular choice, they do sit higher on the carb scale than other Keto-friendly ‘nuts’. As with everything, moderation is key, and when enjoyed on occasion, peanuts can be part of a balanced low carb diet. It is always best to buy a plain, organic peanut butter where possible with minimal ingredients and no added sugars.
Can I Use Another Nut Butter?
Aside from wanting to reduce the carb count, peanuts may be a problem for those with allergies. If you would prefer to use an alternative nut butter, a smooth almond butter would make a good replacement. Simply follow the recipe as instructed, replacing the peanut butter with the same quantity of almond butter. Be sure to adjust your macros to account for any changes made to the original recipe.

Step 1
Add the coconut milk, coconut oil, peanut butter, erythritol, cinnamon and unsweetened cocoa powder to a food processor. You may use an alternative low carb sweetener if preferred, adjusting quantities as desired. You may also use more or less sweetener to suit your personal tastes.Step 2
Blend the mixture together well to combine. It should be completely smooth and creamy, like a thick milkshake consistency. You may taste and adjust sweetener, cocoa powder and cinnamon as needed.Step 3
Divide the mixture evenly between four individual popsicle molds. Insert the popsicle sticks and seal with the lids. Transfer carefully to the freezer for up to two hours or until set firm. Allow to sit for ten minutes after freezing before carefully removing from the molds. Alternatively, run the molds briefly under hot water to loosen. Keep frozen until ready to serve.
