Baking powder
0.5 tsp
Cream cheese
1.5 oz
Coarse Kosher Salt
0.25 tsp
Garlic powder
0.13 tsp
Sesame seeds

Step 1
Preheat an oven to 300 F. Prepare a 4” hamburger bun pan with cooking spray, preferably avocado oil. Separate the eggs and place the whites and yolks in separate bowls. Add the baking powder to the egg whites. Whip the whites until stiff peaks form.Step 2
Melt the cream cheese in a microwave-safe bowl. Heat in the microwave for 30 seconds. Stir the cheese so it cools down before adding it to the egg yolks. Then add the kosher salt and garlic powder. Stir to combine.Step 3
Add ⅓ of the egg white mixture to the yolks and gently fold in. Add the rest of the egg whites and gently fold in until it is all incorporated. You should see no white streaks from the egg white.Step 4
Divide the batter evenly between 6 cavities. Sprinkle with the sesame seeds. Bake for 25-30 minutes or until the buns are golden brown. Allow to cool slightly before removing from the pan and serving.

Easy to make. Agree with previous comment that you can’t cut them in half (if you make 6) so 2 were needed for a hamburger. Will try next time to only make 4 so they will be thicker, as a previous commenter did. Really not bad at all except for the texture. Even after baking for the full time (+) they were fluffy, yet ‘soggy’ feeling on the tops. Toasted my husband’s but didn’t firm them much😉 Would make again though👍🏻

Not the best, I do admit. Prefer 90 sec microwave as bread substitute

Can you freeze them for future usage? Or do you have to eat them right away…?

I read that you can freeze them for up to 3 months.

Made them in (4) 3 1/2 inch remikens and cooked for a few minutes more. I have to say by far these are the best keto “BUNS” so far. They came out thick enough to cut in half for sausage, burgers, or eggs & cheese.

Game changer. You really can't cut them in half so you need 2 in order to make a sandwich. Will make again, and again....
